Crew neck, quarter zip or hooded?

Quarter zip is the one to pick if the temperature changes through the day, because you can vent it without taking it off. Crew neck is the cheapest and the warmest for the weight. Hooded is warmest of the three and is the one some sites will not allow near machinery, so check before you kit a crew out in them.

Is a sweatshirt or a fleece warmer?

A fleece is warmer for its weight and dries faster. A sweatshirt takes more abuse and looks tidier with a logo on it. Crews often run both, with the sweatshirt as the branded layer and the fleece over it.
